Can I wash my knife in the dishwashwer? NO. Do not risk the chance
of metal touching metal. Nicks in the blade pose a risk.
Does my knife need sharpening? How should I know? Is it dull? All
straight edge knives can be sharpened (except Kyocera Ceramic knives, they require special
attention). Serrated edges cannot be sharpened. Well, actually, they can be,
but you'll be ruining the knife if you do. So don't do it. Use them, and once
they get dull, buy new ones. A dull knife can cause accidents, slippage and so forth
during cutting; use a sharp knife!!
Can I use any sharpener with any knife? No. Well, you can, but then you won't
get the maximum sharpness out of that knife. Use the knife sharpener that came with
your knife block or the one recommended by your manufacturer. Electric knife
sharpeners are great if you can afford one. You can use these with any knife sets
(except Kyocera Ceramic knives). Unless specified by your manufacturer, a diamond
head electric sharpener is good to use.
What's the single best knife to own in a kitchen? The Chef's knife. It's great
for doing almost anything (except pairing, although I've seen my cooking buddies do this).
Can you give me some advice about cutting boards? Wood. Use wood.
Anything else can potentially cause your knife edge to dull. Glass, metal and even
formica can potentially harm your knife edge. Polypropylene is my 2nd choice.
